Pork crackling
Crackling is like the smoother, crispier sibling of scratchings, with a lighter bite and plenty of crunch. Generally made from shoulder rind, it has a different fat-to-skin ratio and goes through a double-cooking process – first slowly rendered at low heat, then crisped up at a higher temperature for a less fatty, crunchy finish!

Pork rind snacks, and scratchings in particular, have been a UK favourite for centuries, dating back to when Black Country families would fatten up a ‘tunky pig’ for Christmas. After the pig was slaughtered, the skin and fat were sliced into strips and deep-fried for a crunchy, savoury treat.
Some say scratchings really took off in the early 19th century when people found ways to use every part of the pig, ensuring nothing went to waste.
