Baked salmon sushi in crispy seaweed cups

For a bite-sized twist on the traditional sushi flavours, these crisp and irresistible seaweed sushi cups provide a light, fresh snack, perfect for a healthy lunch or elegant appetiser.

Each cup provides a huge burst of umami flavour with a combination of marinated salmon, a drizzle of spicy mayo, and fresh toppings.

This small dish is not just quick to create, but also packs in a whole range of nutrition, with seaweed to provide antioxidants and vitamin B12 – excellent for an energy boost, and healthy fats and protein from the fish.

Ingredients (makes 8 sushi cups)

  • 2 packs of MORiSH seaweed thins
  • 100g salmon, diced
  • 250g sticky sushi rice, cooked and cooled
  • 2 tsp sesame oil
  • 2 tsp soy sauce
  • 1 tsp lime juice
  • 2 tbsp spicy mayo (make your own by mixing in some paprika)
  • Toasted sesame seeds
  • Chopped chives, avocado, fresh chili, spring onions, coriander for garnish … totally up to you!

How to create mouth-watering seaweed sushi cups

  1. Gently toss the diced salmon in your sesame oil, soy sauce and lime juice and let it marinate for a little.
  2. Delicately fold two seaweed thins into a cup shape and press them into a hole of a muffin tray to hold their form.
  3. Place a tablespoon of cooked sushi rice in each cup to help anchor the shape.
  4. Add some of your marinated fish to fill the cups.
  5. Bake at 180°C for 8–10 minutes.
  6. Drizzle the spicy mayo over your cups, sprinkle on the chopped garnish, then finish with sesame seeds and a dusting of chives.
  7. If you like it hot, you could finish with a grating of fresh chili or a drop of hot sauce.

A top tip for the ultimate seaweed snap

Seaweed sheets can begin to wilt if they’re combined with wet ingredients. If you want to maintain the crispy texture, then be careful when filling the cups before baking and add your cold toppings when you’re ready to plate.
