Indulge yourself in a refreshing poke bowl experience with a fruity twist. Packed with bright, fresh ingredients and powered by the ocean’s very own superfood: roasted seaweed.
This poke bowl ditches the heavy, starchy base and instead celebrates a light, summery feel with fresh fish, juicy fruits and a crispy umami topping for some added texture.
Soak in the vitamin B12 for some extra brain power and a boost in antioxidants to help with cell repair and gut health. The ideal quick and easy summer brunch.
Ingredients
- A few MORiSH roasted seaweed sheets (tip: use scissors to cut into small stripes)
- 50g sashimi-grade tuna, diced
- 50g sashimi-grade salmon, diced
- 1 small ripe avocado, diced
- 1/2 ripe mango, diced
- 1/4 cucumber, thinly sliced into matchsticks
- 1 tbsp soy sauce
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp spicy mayo
- 1 tbsp furikake seasoning
- 1 tsp toasted sesame seeds
- 2 tbsp chopped fresh coriander
- 1 spring onion, finely sliced
- Small handful of wakame seaweed salad
- 1/2 cup cooked and cooled Japanese or sticky rice
How to build your delicious sashimi poke bowl
- In a small bowl, gently toss your diced tuna and salmon in the soy sauce, sesame oil and rice vinegar, then leave it to absorb all the powerful flavours.
- Add your cool Japanese rice at the bottom of your bowl to form the base.
- Arrange your avocado, mango, cucumber and marinated fish over the top.
- Sprinkle over your furikake, sesame seeds, coriander and spring onion.
- Drizzle your bowl with a touch of wakame and your spicy mayo to taste. (If you like it hot, a few spots of wasabi could dial up the flavour for you).
- Finally, layer on your MORiSH seaweed sheet shards to finish off the dish with a crunch.

To keep your seaweed from going soggy and maintain that satisfying crunch, make sure you add your seaweed at the last moment before serving. This finishing touch is what makes the bowl truly sensational and creates a lunch fit for a gourmet in minutes.
