Omakase-style seaweed hand rolls – bring the restaurant experience to your kitchen

There’s something rather satisfying about being handed a freshly made hand roll at a sushi counter: warm rice, delicious fillings and that unmistakable crunch of crisp nori.

Omakase-style temaki – Japanese hand rolls – have become increasingly popular at sushi restaurants, including a growing number of hand-roll experiences in London. The idea is simple: make each roll to order and eat it straight away, while the seaweed is still wonderfully crisp.

And the good news? You don’t need to book the hottest sushi counter in town to enjoy one.

With MORiSH crispy seaweed sheets, you can bring a little of that restaurant experience into your own kitchen.

What are omakase-style hand rolls?

Let’s start with the terminology.

Omakase comes from the Japanese makaseru, meaning to entrust or leave something to someone else. In a restaurant, an omakase meal means putting your trust in the chef to choose what you’re served, often as a sequence of dishes or courses.

Temaki, on the other hand, literally refers to hand-rolled sushi. Instead of being cut into neat little pieces like maki rolls, temaki is usually shaped into a cone or cylinder and eaten with your hands.

Put the two together and you get a fun, restaurant-inspired way to enjoy hand rolls: let the fillings change from roll to roll, make them as you go, and eat each one immediately.

And there’s a very good reason for the speed.

The moment moist ingredients such as sushi rice come into contact with nori, the seaweed starts to soften. That’s why freshly made hand rolls are designed to be eaten straight away – crunch first, chat later.

Why seaweed makes the perfect hand roll

The beauty of temaki is its simplicity. You need just a few good ingredients: crispy seaweed, sushi rice and your favourite fillings. No sushi mat. No complicated equipment. No need to spend an hour trying to make perfectly symmetrical rolls.

MORiSH’s seaweed snacks make a fun shortcut. They’re already roasted and crispy, with a delicious savoury, umami flavour – so all you need to do is add your filling, fold and eat.

Our seaweed thins come in a variety of flavours, including extra virgin olive oil, avocado oil, sesame oil and shiitake, so you can even match the seaweed to your filling. Think of them as your crispy little canvas.

Seaweed provides fibre, iodine, vitamin B12, protein and naturally occurring antioxidants – a deliciously crispy way to add a little extra goodness to your hand rolls.

Easy omakase-inspired filling ideas

This is where you can have some fun.

One of the best things about hand rolls is that you don’t have to commit to one filling for the entire evening. Make one, eat it, change the filling and make another.

Why not try:

  • Salmon, avocado & cucumber – fresh, creamy and classic
  • Spicy tuna & spring onion – a little heat with plenty of umami
  • Prawn & sriracha mayo – sweet, spicy and seriously moreish
  • Crab, avocado & sesame – delicate with a lovely nutty finish
  • Shiitake, cucumber & miso – a brilliant vegetarian combination

And don’t feel you have to stick to traditional sushi fillings.

Crispy vegetables, tofu, egg, pickled ginger, edamame or even leftovers from dinner can all make their way into a hand roll.

That’s the beauty of DIY temaki: there are no prizes for following the rules.

Our roasted seaweed sheets come in different flavours, so you can experiment with the combination of seaweed and filling until you find your favourite.

The DIY hand roll experience at home

If you’re hosting friends, hand rolls make a brilliant interactive dinner. Rather than spending the entire evening in the kitchen assembling everyone’s sushi, put everything in the middle of the table and let your guests create their own.

Set out bowls of:

  • Sushi rice
  • Sliced avocado and cucumber
  • Seafood or cooked vegetables
  • Tofu or other favourite fillings
  • Spring onions
  • Sesame seeds
  • Soy sauce
  • Spicy mayo or other dipping sauces

Then let everyone build their own.

It’s less formal than a traditional sushi dinner, much more interactive and, importantly, means everyone gets exactly what they want.

You could even turn it into your own mini omakase: start with a simple salmon roll, move on to something spicy, then finish with a completely unexpected combination.

Chef’s choice? More like everyone’s choice.

Just remember the golden rule: assemble your hand roll just before eating to keep that satisfying seaweed crunch.
