How beef snacks are made, from cut to cure
The process of making air-dried beef snacks actually goes back centuries – so we’ve had plenty of time to perfect it. The traditional preservation method begins with some quality cuts of lean grass-fed beef. And you’ll be happy to hear that the rest of the ingredient list is pretty short, ensuring a healthy, guilt-free snack.
The process:
- Premium cuts of silverside beef are selected to ensure a low-fat content – ours are ethically sourced from certified farms.
- Our skilled artisans then marinate the beef in salt, vinegar and pepper with a blend of spices to add an extra kick. This is a natural preservative method that also helps to lock in some fantastic flavour. The vinegar is the star of the show, adding a real depth of flavour and tenderising the meat as it dries.
- Then the beef slabs are hung on hooks to slowly and naturally air-dry in a controlled environment. The whole process takes a full 6 days – but the result is definitely worth the wait!
- Once it’s ready, the slabs are cut into small beef bites for your convenience and packaged immediately to preserve the freshness.
With these healthy beef snacks, that MORiSH flavour, extra iron and vitamin B12 (cobalamin) are locked into the meat with the slow-dry infusion process. The result is a tender, chewy and amazingly seasoned treat designed to build up your energy and add some protein to a healthy diet.
